However, if you choose NOT to start a new playthrough after beating the last boss you can literally go and find everything you need on the first playthrough barring a few rings that are literally not available until NG+. NOTE ABOUT MISSABLE ACHIEVEMENTS: Certain bosses are optional and you have to discover certain areas and Covenants. The way you are meant to get covenant items is to play online but you can also farm them as very rare drops from certain enemies so it is possible (but time consuming) to do this offline if you wish. In order to get the achievements for all spells/rings you HAVE to rank up pretty much every covenant in one way or another.
